Barry's Vesta Chicken Supreme Recipe
Do you also remember coming home from school to find that your mum had made you a Vesta Chicken Supreme & Rice? It was a dried ready meal which contained 2 sachets, one with the sauce mix, the other the rice. A lot of people hated this 'meal', and it technically doesn't really resemble most Chicken Supreme recipes out there these days which is what makes it unique.
Vesta are a brand name owned by the UK company Premier Foods. I created an Ipetition a few years ago http://www.ipetitions.com/petition/chickensupreme/ in the hope that we could collectively encourage the company to reintroduce this, if only for a limited time. However i've continuously hit a brick wall and my recent request for the ingredients list was responded with a garbled response seemingly making the point of 'it's our recipe and you're not having it'.
This meal was such a delight for me as a growing teenager in the 80's that the taste has never escaped me, and after spending many years in the kitchen doing the day to day family cooking i've developed more of a sense of flavours.
Overview of the dish
The main element of this nostalgic meal to me was the actual chicken itself. I remember being able to almost suck the moisture out of the chicken pieces which although may seem rather gross upon reading this, is actually quite nice. The other ingredients are rather basic. There is an aroma which sets this dish apart in my opinion - one which you'd come in from school and know what was for dinner. It took me some time to work it out, but it's simply green beans.
Anyway, were we go. You may notice that i've used tinned vegetables. I did this as i guessed the original recipe couldn't use anything 'fresh' as it was dried so i gathered that maintaining the cheap element was important to stay faithful to the original taste.
Ingredients
1½ tablespoons of Butter (or supermarket spread equivalent)
5 tablespoons of Plain Flour
2 Knorr Chicken Stock Cubes
1 tin Creamed Mushrooms (283g)
300g tinned Split Green Beans with about 2tbsp of the juice
300g tinned Carrots with about 2tbsp of the juice
Milk - Just over a pint
Fridge Raiders (slow roast flavour)- 3 packets with each piece cut into thirds
Pepper
dried parsley
Easy Cook Basmati or Long Grain Rice
Method
- In a non-stick saucepan melt the butter
- Add in the Flour and stir until incorporated, cook out for a few minutes but don't burn (i've added carrots here but DONT - wait until later as per later steps)
- Add a little milk gradually and incorporate into the butter/flour mix until it loosens
- Now it's loosened add the stock cubes and stir until they're dissolved
- Now add in the vegetables and veg water and mix in
- Add the tin of Creamed mushrooms and incorporate
- continue adding the milk gradually with the heat on moderate and incorporate a bit at a time until the sauce is of the correct consistency (vesta sauce was always rather thick).
- Add the fridge raiders and stir in. Bring to a very brief simmer and remove from the heat.
- Add pepper and about a teaspoon of the dried parsley and stir in
- Serve in a rice ring as your mum used to do.

ReplyDeleteI too have had similar run ins with Premier Foods (was Continental Foods) here in Australia. Likewise I emailed and called them internationally - what a mob of idiots when they do not listen to what the customer wants.
I had been eating this all through my upbringing and wanted my children to experience the deliciousness of Chicken Supreme. Now I am 44 and can finally do it with your recipe.
I nearly fell over backwards when I have now found that you have done a recipe. YOU BLOODY LEGEND!
Anyways a couple of questions:
1/. Can you name the brand of crème of mushroom soup that you use - as I too have tried cooking this up and failed a number of times, as there are so many varieties of mushroom soup and non of them taste the same...a secondary key factor as well.
2/. brand of green beans
3/. I am trying to locate the chicken here in Australia - so I may have to import it, any idea's.

Darren, thanks for the comment and many apologies for the very late reply. I forgot i created this page and just stumbled back upon it. Don't know if i've already answered but here goes. BTW my kids (14yrs old and upwards) think that my Chicken Supreme is their favourite food !
Delete1) I used Campbells Condensed cream of mushroom soup. I've tried it with non-condensed and it doesn't work
2) Generic Supermarket tinned green beans, open them up and work through the tin with a sharp knife to make them really small pieces. The green bean taste is meant to be quite prominent
3) That's gonna be difficult. I used Mattessons 'Fridge Raiders' which is a reformed and ready to eat chicken snack here in the UK, popular with kids. Our Lidl also stocks their own branded version with seems identical. Alternatively have a look at the Fridge Raiders ingredients list and use that to see what's similar where you are. Good luck, let me know how you get on.

ReplyDeleteI tried this with a few changes due to can't find some stuff in Australia.
ReplyDelete1.Rather make a Rue I used a cornflour slurry from the bean water to thicken. Since I figured that's what a 70s group would do.
2. Used chicken stock powder instead. May have used a little much however.
3. Used a tin of peas and carrots (drained) and a tin of beans, water kept.
4. added a teaspoon of MSG, because it would almost certainly have been in there.
5. added a teaspoon of djion mustard. because it also almost always there
6. quarter teaspoon of tumeric powder for a little colour.
Worked out very well. Not quite how I remember it but very close
Another Aussie, who has just stumbled across this page, didn't realise there were so many other fans of Vesta meals, especially the Chicken Supreme & Rice. So very, very happy that Starspud has figured out a recipe and I'm super excited to try it out. High 5 to you Starspud for effort alone. Vesta meals were a great personal favourite of mine.

I too grew up on Vesta Chicken Supreme here in Australia,I can't believe they discontinued something so good,I have craved for one for many years now, it's hard to replicate it with overseas ingredients here in Australia, so I've set about making the Australian version, I am very close after many attempts and will let everyone know when it's done.

ReplyDelete@starspud your recipe was very similar to the vesta as I use to love there chicken supreme but I found that the chicken raiders just didn't taste the same. It says they used dried chicken whatever that is. But 10/10 for your yummy recipe. Thanks
